15 – Minute Blueberry Sauce

Here’s a recipe for a quick and easy blueberry sauce. This sauce would be a great topping for breakfast, brunch, and desserts. Today the sauce was used as a topping to French Toast.

Recipe

1 Cup of Blueberries

1/2 cup of sugar

1/2 cup of orange juice

1/2 Tsp of corn starch (adds thickness)

1/8 Tsp of cinnamon

Combine all ingredients in a sauce pan on med-low heat. Let sauce simmer to boil for 5 mins. Stir and turn to low for the remaining 5 – 7 mins. Sauce should be thick and coat spoon. Turn off and set aside to cool. Use topping on your desired dish.

The Strawberry French Toast Stack

This week I decided to make french toast for brunch and add a strawberry topping. In between that is!! Check out the recipe and give it a try.

Makes about 2-4 Slices

Strawberry Topping

Strawberries

Sugar

*Dice or Cut Strawberries (to your style) and add sugar (I added 1 Tbsp). Set aside.

*Minimum 30 mins – 1 hour for juices to extract

Ingredients

2 Eggs

1 Tsp of vanilla

1/4 cup of Milk

1 Tsp Sugar

1 Tsp of Cinnamon

Bread (Artesano was chosen for this recipe)

Combine ingredients except bread in a bowl and whisk. Lightly press/cover bread with the mixture one by one.

Turn Skillet on medium heat and add butter or oil (butter is my preference). Add mixed bread slices to Skillet and fry until golden brown (about 1-2 mins on each side).

Take two slices of the french toast and add the strawberry topping in between each slice of bread.

I dusted the top with powder sugar but whipped cream would be great on top as well. Enjoy!

Brunch in Louisville

Brunch in Louisville, KY is a must when visiting. We decided to try the restaurant Zeggz and the food was pleasing and delicious. I was enamored over the Crème Brûlée French Toast. The mimosas were spectacular with the use of one of my favorite Champagne brands Wyclef. If you are in the Louisville, KY area, give Zeggz a try.

Bacon Avocado Toast

Toast to this trendy twist on breakfast for slices of bread. Avocado Toast is a delicious and healthy alternative to using butter. And the toppings that you can use are endless. I wanted a savory taste so I decided on Bacon as my topping. This would be an awesome menu item for Brunch as well. Read the recipe below and give it a try.

Ingredients

2 Slices of Bread (My bread of choice was Sara Lee Artesano)

1 Slice of Thick Cut Bacon (pan fried)

1 Avocado

1 Garlic Clove ( chopped)

1 tbsp. Sautéed Holy Trinity Seasoning*

Pan fry the bacon and cut into crumbles. Set aside.

After opening the Avocado, gently scoop the middle with a spoon into a bowl. Add chopped garlic.

*Extra Steps (my preference)

I sautéed a tablespoon of Holy Trinity Seasoning (onion, celery, and green bell pepper). Added a dash of salt and paprika to taste. ( Lemon Pepper Seasoning would go good as well). I also added a drizzle of avocado oil.

Toast Bread. Set Aside.

Smash the avocado mixture with a fork. Spread over toasted bread. Sprinkle some lemon pepper seasoning over toast.

Add crumbled bacon.

Brunch in Inman Park is always a good idea. We decided to give the Brasserie at Parrish a try and the restaurant did not disappoint. The food was absolutely delicious and the mimosas bubbly. The vintage French inspired decor was also pleasing. If you are in the Atlanta area, please give The Brasserie at Parrish a try.

The Albert Burger

I set out on a gorgeous Saturday to have Brunch With my husband and siblings. I discovered a quaint neighborhood bar located in Inman Park called The Albert. Let me assure you that the food is so delicious and we ate every bite of it. My favorite menu item is The Albert Burger. It’s no surprise that I’m a huge pimento cheese advocate and this Burger gave me pimento cheese life!! Topped with bacon and pickled red onion. Now I know why The Albert is the favorite neighborhood bar in Inman Park. Give The Albert a try on your next visit to Atlanta.

Located in the historic Grant Park neighborhood is a new Market and it is adorable. I love this concept of a community grocery store and cafe. Did you know there is a movie studio located outside of Atlanta? More importantly, did you know they served brunch on Saturdays?? That’s right, Pinewood Atlanta Studios located in Fayetteville, Ga serves a mimosa Brunch on Saturdays. The Garden Bird

I just have a question? Who’s mother, aunt, or grandmother is in the kitchen cooking up collard greens and frying chicken?? That’s exactly what comes to mind after eating at Maple Street Biscuit Company. My brunch selection was the Garden Bird. This biscuit came equipped with a southern fried chicken breast and topped with collard greens, fried egg, and a dash of hot sauce. The concept is so southern and takes you back to the days when everyone sat around the kitchen table and enjoyed great food and conversation.
