I just have a question? Who’s mother, aunt, or grandmother is in the kitchen cooking up collard greens and frying chicken?? That’s exactly what comes to mind after eating at Maple Street Biscuit Company. My brunch selection was the Garden Bird. This biscuit came equipped with a southern fried chicken breast and topped with collard greens, fried egg, and a dash of hot sauce. The concept is so southern and takes you back to the days when everyone sat around the kitchen table and enjoyed great food and conversation. The Andouille Sausage Omelette

Today I wanted to cook an omelette but with a Nola twist. I decided on andouille sausage with a cajun remoulade sauce. Paired with a couple pieces of bacon (my dog Brody had the 3rd piece!) and orange slices and this Brunch was good to go. See the recipe below and give it a try.

Ingredients:

2 Fresh Eggs

Andouille Sausage (as much you’d like!)

Holy Trinity Seasoning (Onion, Celery, Bell Pepper)

Garlic Clove

Munster Cheese (1 slice)

Creole Seasoning

2 Slices of Bacon

Chop holy trinity seasoning and garlic clove until diced fine. For this Omelette I used 1/4 each vegetable for chopping. If you chop too much seasoning, don’t worry you can use the seasoning for other recipes. Chop the andouille sausage into small dices. In a medium skillet on medium heat, fry up the bacon until done and set aside. In the same pan sauté the holy trinity, garlic, and andouille sausage until done. Add Munster cheese slice.

Mix the eggs in a bowl and add the creole seasoning or seasoning salt (about a pinch) no more than 1/8 teaspoon. Add butter (unsalted) to the pan. Add egg mixture and allow the eggs to form a ring around the sausage mixture. With a spatula, fold the eggs towards the sausage in a repeated motion as the eggs cook. Do the same to the opposite end of Omelette. Gently fold the eggs over and slide onto the plate.

Cajun Remoulade

1 cup of Mayo

1 Tablespoon of Dijon Mustard

1 teaspoon of holy trinity seasoning

1 teaspoon of lemon juice

1 teaspoon of creole seasoning

1 pinch of Cayenne pepper

Mix all ingredients and drizzle over Omelette.

Pastrami and Egg Sandwhich

Who would’ve thought a deli would be a great place for Brunch?? I fell in love with The General Muir and its ambiance this weekend. My brunch item selection was the Pastrami and Egg sandwich and let me tell you it was so divine. Located in the Emory University area, please give The General Muir a try for some good brunch eats.

The Chef P Biscuit

After months of trying to gain a table at the Atlanta Breakfast Club, we finally succeeded to try the Chef P Biscuit. This fried chicken goodness is laid on two buttermilk biscuits topped with egg, cheese, and a mountain of white gravy. Can we say “forkyeah”?? It was that good. If you are in the Atlanta area, give the Atlanta Breakfast Club a try.

The Lazy Chicken

Full as a fat cat! Is the take away from this Brunch adventure. Located in the Kirkwood neighborhood, Elmyriachi serves up great food and hospitality with their dish “The Lazy Chicken”. Picture this…fried chicken topped with a green chile white gravy over a buttermilk biscuit. This dish was divine! If you are in Atlanta, stop by Elmyriachi for Brunch.

The Cheat Day Shake!!

We had a great time at My Fair Sweets! I wanted to try the Cheat Day Shake and get a taste of the Instagram buzz. The buzz is right!! This hip yet glam dessert spot is the place for a nice cool shake. The Cheat Day Shake consists of a vanilla shake surrounded by confetti sprinkles topped with a mound of whipped cream and glazed donuts!! I know just reading that made you drool! I was walking in the Krog Street Market today and decided to try Richard’s Southern Fried Hot Chicken. The Chicken sandwich was so flavorful and had the right touch of heat. “Fat Boy” Brunch

What a name?? And yes it suits this dish well. Food 101 in Sandy Springs, Ga. has a winner!! This brunch menu item includes southern fried chicken on an open faced biscuit with sausage gravy topped with scrambled eggs and a side of home fries! One word to describe my experience at Food 101 is FULL. If you are visiting or live in the Atlanta area, give Food 101 a try for Brunch.
