Sweet Potato Pie
1 lb of sweet potatoes
1/2 cup unsalted butter
1/2 cup evaporated milk
1 Tbsp sweet condensed milk
3/4 cup white sugar
1/4 cup dark brown sugar
2 eggs
1/8 tsp fresh lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp of pure vanilla extract
1 nine inch unbaked pie crust

Preheat the oven to 350 degrees. Boil the sweet potatoes until tender. Peel and set aside to cool.

In mixing bowl, stir potatoes and butter until blended well. Stir in milk, eggs (one at a time), sugar, nutmeg, cinnamon, lemon juice, and vanilla. Mix well for about 5-8 mins. Filling will look soupy!! (It’s all good! You are doing great!) Pour Filling into pie crust.

Place pie in the center of the oven on the top rack. Bake for 45-60 until fork comes clean. Should be around 50 mins ;0). Remove from oven and place on cooling rack. Once cooled, slice up and enjoy!! ;0)
