Crashing Witches & Ghost Cupcakes!!!

Happy Halloween!!! I must say, next to Christmas, Halloween is by far my favorite time of the year!! Everyone knows that I just love to sit back and watch cheesy horror films ;0). Tonight I made cupcakes to go along with a friendly and fun ghoulish spirit! My crashing witch brownie cupcake and ghost cupcake have a twist to them. I baked the brownies inside of ice cream cones…Yummy!! These cupcakes will be great at your next Freight Fest!! Happy Baking ;0)

Crashing Witch
Small Candy Canes (legs)
Tootsie Roll Candy (boots)
Unwrap the candy and put in microwave for 8-10 seconds. Next, cut candy cane at hook on an angle and mold the tootsie roll candy on hook to form boot shape. Set on parchment paper or foil to set. Dyed coconut flakes were used as the grass for top of cupcake. Insert legs and you have a crashing witch!

Ghosts
Using a #12 decorating tip, pipe icing onto cupcake to form ghost figure. Eyes are mini semi-sweet chocolates

Brownie Ice Cream Cone Cupcakes
Use your favorite brownie mix and follow instructions on box. Cover your muffin tin with foil and poke holes in each section where the cone will stand. Spoon about 2/3 of mixture into cones and bake at 350 degrees. Do not over spoon mixture! When done let cool completely ;0)

Red Hot & Blue…Four Thumbs Up!!!

After the NC State v. UNC Chapel Hill rivalry game Saturday, my hubby and I decided to have some BBQ. We decided to try Red Hot & Blue located on Fall of Neuse Rd in Raleigh. OMG!! It was awesome!!! We both had the BBQ pulled pork sandwich with a side of fries! It was only $7.99 and the portion was huge!!! Check them out and I guarantee you will be satisfied with the outcome!! Yummmmm ;0)

Week 3 Cake Decorating Class!!!

I am taking a basic cake decorating class at Michael’s and it is really cool.  My awesome instructor Janice has been baking for years and has really shown the class some cool tricks and tips.  It is a 4 week class and this week we learned different decorating styles for cupcakes.  Shout out to all my classmates!! Whoop Whoop!! :0)

Jessica Biel and Justin Timberlake are married!!!   According to E! Online, this adorable couple said “I Do” early Friday (October 19, 2012) at the Borgo Egnazia Resort in Puglia, Italy.  Mr. & Mrs.Timberlake were surrounded by close family and friends as they said their vows to one another!!! :0)  Congrats newlyweds and may God bless your union :0)

Buns Buns Buns!!!

It was a gorgeous day Sunday morning so I decided to take a walk in Downtown Chapel Hill.  I loved the atmosphere and the charming beauty of the buildings.  I had lunch at Buns and it was the best!!  They are known for their burgers and fries with all sorts of toppings to choose from.  I went for a Carolina Style hot dog instead (chilli, slaw, onions, & mustard)…..Yummy!!!  Check out Buns in Downtown Chapel Hill :0)

Brandy Puttin It Down!!!

Sweet Potato Pie Cupcakes!!!

I took my baking from scratch to the next level!! Sweet Potato Pie Cupcakes…Yummy!!!  I took a southern dessert staple and made it into cupcakes.  I have provided my recipe version of Sweet Potato Pie Cupcakes with whipped cream topping…..Happy Baking!! :0)

Makes 12 cupcakes

Ingredients

  • 16 oz can of Candid Yams (For Filling)
  • 1 1/2 cups of all purpose flour
  • 2 Eggs
  • 1 tsp of vanilla extract
  • 1/2 tsp of baking powder
  • 1/4 tsp salt
  • 1 cup of sugar
  • 1/2 cup unsalted butter softened
  • 2/3 cup cold milk
  • 1/2 tsp lemon juice (For Filling)

Preheat Oven to 350 Degrees

Combine all dry ingredients in mixing bowl, then add butter and mix low for 1 minute, add milk, vanilla, and eggs.  Place mixture on low for 2-3 minutes.  Place cupcake liners in baking tin and pour mixture about 3/4 full.  Bake for 20-25 minutes or until toothpick comes out clean.

Filling

Drain the candied yams saving about 1/4 cup of the syrup.  Mash the yams and add the syrup and 1/2 tsp of lemon juice and continue to mash until smooth.

To Fill Cupcakes…..Take a melon ball ( I used the 1/2 tsp measuring tool) and scoop the middle out of the cupcake…not cutting through the cake.  Place filling in icing bag and fill the cupcake with the filling.  Top the cupcake with whipped cream. Sprinkle a pinch of cinnamon on whipped cream topping and serve immediately ;0)
