Saturday Cupcakes!!

Fresh out of the oven!! These are my Pineapple-Coconut Rum Cupcakes :0) The hubby and brody have already ate half the batch!! Smmmhhhh!! Gratefully, I was able to steal one away for a pic :0)  Enjoy the recipe and try them yourself!! Yummy!!



2 cups all-purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup crushed pineapple
1/3 cup butter
1 cup milk
2 large eggs

1 tsp of vanilla extract (optional)

Preheat oven to 350 Degrees, combine all ingredients in large bowl, mix on medium speed for 2 minutes…..line cupcake pan with liners and fill 2/3 cup….bake for 20-25 minutes til golden brown.  Let cupcakes cool completely

Coconut Rum Icing:

1/2 cup butter softened, 1 teaspoon vanilla extract, 4 cups confectioners’ sugar, 1 shot of Malibu Coconut Rum, 2 tablespoons milk, 1 tablespoon of pineapple

Combine ingredients in mixer on low til light and fluffy…frost cupcakes and enjoy!!
